With the New Year now upon us, we generally look to start off on the right foot personal health-wise. It could be joining a gym, setting weight loss goals, or just generally being healthier in body and mind. What we eat and put into our body can and does have a huge impact on our entire body’s overall health. These “Superfoods” are readily available year-round and come in the forms of leafy vegetables, fruits, and dairy. Cataracts and Age-Related Macular Degeneration are the leading causes of visual impairment and acquired blindness in the U.S. More than 25 million adults over 40 are impacted by one, or both, of these impairments.
Spinach and kale are two superfoods that are packed with Lutein and Zeaxanthin. These carotenoids and antioxidants have many health benefits that include your eyes. In particular, those antioxidants lower the risk of macular degeneration and cataracts. The American Optometric Association reports, “…antioxidants lutein and zeaxanthin likely play a role in preventing cataracts. In fact, a recent study demonstrated that higher dietary intake of lutein and zeaxanthin and vitamin E was associated with a significantly decreased risk of cataract formation.” Our body cannot produce lutein so we must get it from the foods that we eat.
Not a big fan of green leafy vegetables? How about incorporating delicious egg yolks in some of your recipes (along with omega-3 fatty acids which are also good for eye health) and the sweetness of kiwi and red seedless grapes? In fact, some research has shown that the antioxidants from an egg may be more easily absorbed by the body than from other sources.
A key point to remember. Antioxidants cannot reverse the eye damage caused by age-related macular degeneration or cataracts. Though its use may prevent or slow the progression.
So how ‘bout some sliced hard-boiled eggs (or deviled eggs) alongside a fruit platter with kiwi and red seedless grapes as an appetizer or after dinner display? Couple that with some fresh spinach and kale sauteed with olive oil and garlic as one of the side veggies alongside the main course. Sounds yummy and eye health beneficial all in one!
